Abstract |
Sea bass, 35g initial weight, were distributed into 12 tanks according to a factorial experimental plan (2x3). For 29 weeks, they were administered feeds which differed with respect to their lipid quality (oxidized "ox" or not "T") and their alpha-tocopherol content (0, 40 and 300mg.kg-1 of feed). At the end of the experiment, 15 fish per tank were sampled and separated into groups (pools) of three fish. After having been sacrificed and bled, muscle was sampled. Chemical analysis was immediately made to determine the water, lipid, ash, alpha-tocopherol(AT) and the thiobarbituric acid reactive substances (TBARS) content. Aliquot muscle portions were wrapped in aluminium roll and frozen at -20°C for periods of 6 and 9 months. The AT level and the lipid quality of the feed did not influence the muscular level of water, lipid and ash. At the slaughter time, the muscular AT level was found to be directly related to the feed AT level. It was weaker in fish fed the oxidized feed. In these fish the muscular TBARS was increased, and more at low feed AT level. Freezing did significantly increase muscular TRARS and decrease AT level, mainly in fish fed oxidized feed. The higher was the AT reed level, the less was the increase of TBARS during freezing. |
