Abstract
    The article covers same data gained by muscle analyses of 13 different species of freshwater fish from Central Europe. The work evaluates freshwater fish meat by considering amino acids, minerals, vitamins and fat contents. Eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are also mentioned. The results prove that content of valuable biological substances in carp meat (which represents the prevailing fish in Central Europe) is on a fairly good level. The content of docosahexaenoic acid in the muscle fat of predatory fish is higher than that in planktonophagous fish. The article is a part of more extent research covering the occurrence and evaluating the biological composition of fish in more detail.
